Choosing Your Salmon:
In order to complete this recipe, you'll need to get a salmon fillet ready!
If you are using a store bought fillet, be sure that it is fully thawed out before starting this recipe.

Fresh salmon fillets should have a bright pink, orange or even red color with a fair amount of marbling.
If you are using a wild caught salmon, be sure you clean it properly before you use it to cook with!
Preheat Pellet Grill:
The prep for this recipe is pretty straightforward and shouldn't take more than 15 minutes, so its a good idea to start by preheating your pellet grill.
This is a Traeger grilled salmon recipe, but you can use any kind of pellet grill.

Set the temperature to about 285℉, and make sure your hopper is full of pellets!
Preheating your pellet grill helps makes sure your salmon fillets cook evenly.
Mix Seasonings Together:
Measure and add the following seasonings into a mixing bowl: ½ teaspoon of paprika, ½ teaspoon of garlic powder, ½ teaspoon of sea salt, ⅛ teaspoon of black pepper, and One teaspoon of sugar.

Take your whisk and thoroughly mix them together, creating your salmon dry rub!
Season Your Salmon Filet:
On a clean surface, lay out a sheet of wax paper.
Place your fresh salmon skin side down, on the wax paper.

Take your seasoning and sprinkle the flesh side of the salmon with your seasoning mixture.
If you wish, you can lightly massage the seasoning into the fillet, but it is not required.
Pellet Smoke The Salmon:
After the seasoning process, your pellet grill should be ready to go!
Transfer your seasoned salmon from the wax paper, directly onto the grill grates skin down.

Close the lid and let cook for 1 hour at about 285℉.
The main thing when you cook salmon is making sure it is fully done
Checking For Doneness:
After cooking your fillet for about an hour, take your meat thermometer out.
Insert it into the middle where its the most thick, and read its internal temperature.
The temperature needs to be at least 145℉.

Once you have confirmed your salmon is fully cooked, turn off your pellet grill.
Transfer the salmon onto a clean cutting board or serving tray and let rest for a few minutes.
Serve Your Pellet Grill Salmon:
Take a sharp knife and cut your salmon into as many servings as you wish.
We recommend cutting the salmon into fourths.
